The Japanese Tea Ceremony elevated tea and all its accoutrements to an art form. The ceremony requires years of training and practice to graduate in the art of making and serving tea. The tea practitioner must be familiar with all varieties of tea, calligraphy, flower arranging, ceramics, incense, and a wide range of other traditional arts. Even guests of a formal tea ceremony must have knowledge of the prescribed gestures and phrases, know the proper way to take tea and sweets, and the rules of deportment in the tea room.
A wide range of tea equipment, called dogu is necessary for even the most basic tea ceremony. The full list of tea implements and supplies is voluminous. From cups, pots, and ladles to cloths, cozies, and caddies, the implements that create this ceremony have made their way into modern day tea service.
In the late 1880s, fine hotels began to offer tea service in tearooms and tea courts in Europe and in America. Served in the late afternoon, Victorian ladies and gentlemen would meet for tea and conversation. Many of these tea services continue today at renowned hotels such as the Ritz and the Four Seasons in Boston and the Plaza in New York.
